外酥内软之炸菜饼 Corn & vege fritters



非常好吃的炸菜饼,真的是外酥内软。当着下午茶,点心,都是很好的选择。连平常不吃菜的小朋友都会喜欢哦。

这个食谱呢,我们用到的是冰水。这是一个可以把菜饼炸的非常酥的秘诀之一。试想一下,冰水碰到热油,会发生什么事呢?那个爆发力,就是让它酥到碎的窍门。

最后沾点泰式甜辣酱,简直是人间美味。

需要的材料有:(可以做12-14 个):
150克中筋面粉
30克玉米粉
220-250克冰水/冷水
1茶匙黄姜粉
1.5茶匙盐
1大匙糖
包菜,红萝卜, 玉米, 青葱


Super delicious corn and vegetable fritters. This is a simple yet yummy restaurant quality food that you can make easily at home and it doesn't take lots of time. It is so perfect for morning tea or afternoon tea. Kids who does not like to eat vege will love this "pancake" too.
You don't need lots of oil to make this fritters. Just shallow fry. It is very crispy outside but soft inside.

In this recipe, we use ice cold water to mix all the ingredients. This is also one of the tips why it gets so crispy. (Imagine cold water into hot oil, what will happened).

Dip with thai sweet chili sauce make it more tastier and yummier!!!
Ingredients (to make 12-14 pieces)
150g all purpose flour
30g corn flour
220 - 250 cold water
1tsp turmeric powder
1.5tsp salt
1tbsp sugar
Corn, cabbage, spring onion, carrot
