Ingredients:
1kg Chicken (You can use chicken wing, thigh, Maryland or drumstick)
5-7 sliced ginger
1tbsp sesame oil
2tbsp soy sauce
1tbsp dark soy sauce
2tbsp oyster sauce
Spring Onion
Cooking wine (I prefer to use Hua Diao Chinese wine)
Method:
- Cut the chicken into pieces
- Fry the ginger in a wok with heated sesame oil until fragrant
- Add in the chicken pieces and keep stir frying until half cook (Do not add any water at this stage)
- When it is half cooked, add in soy sauce, dark soy sauce, oyster sauce and the cooking wine.
- You can add a little bit of water at this stage (if you are like me who love the stock (the 'juice') with the rice)
- Keep cooking until it is cooked and finally add in the spring onion.

1kg 鸡肉
5-7 姜片1大匙芝麻油
2大匙生抽
1大匙老抽
2大匙蚝油
葱段
绍兴酒/花雕酒
做法
- 把鸡肉斩小块
- 倒入芝麻油,爆香姜片
- 加入鸡肉(此时不要加水),继续翻炒至肉变白
- 加入所有调味料,在继续翻炒
- 此时可以加些水(如果你是像我一样,喜欢把肉汁淋在饭上)
- 煮至熟,最后放入葱段
