My chicken style / 随便炒鸡肉





Ingredients:
1kg Chicken (You can use chicken wing, thigh, Maryland or drumstick)
5-7 sliced ginger
1tbsp sesame oil
2tbsp soy sauce
1tbsp dark soy sauce
2tbsp oyster sauce
Spring Onion
Cooking wine (I prefer to use Hua Diao Chinese wine)

Method:
  1. Cut the chicken into pieces
  2. Fry the ginger in a wok with heated sesame oil until fragrant
  3. Add in the chicken pieces and keep stir frying until half cook (Do not add any water at this stage)
  4. When it is half cooked, add in soy sauce, dark soy sauce, oyster sauce and the cooking wine.
  5. You can add a little bit of water at this stage (if you are like me who love the stock (the  'juice') with the rice)
  6. Keep cooking until it is cooked and finally add in the spring onion.



材料
1kg 鸡肉
5-7 姜片1大匙芝麻油
2大匙生抽
1大匙老抽
2大匙蚝油
葱段
绍兴酒/花雕酒

做法
  1. 把鸡肉斩小块
  2. 倒入芝麻油,爆香姜片
  3. 加入鸡肉(此时不要加水),继续翻炒至肉变白
  4. 加入所有调味料,在继续翻炒
  5. 此时可以加些水(如果你是像我一样,喜欢把肉汁淋在饭上)
  6. 煮至熟,最后放入葱段
