Mango Yoghurt Cake / 芒果优格蛋糕


这个蛋糕的口感就像日式芝士棉花蛋糕一样,只是少了芝士的味道,多了芒果的味道。
鸡蛋 4
塔塔粉 1/2 小匙
幼糖 50
牛油 50
芒果味优格 200
特幼粉 50
粟米粉 20
  1. 牛油隔水炖溶,离火后与优格一起搅拌均匀。
  2. 蛋白与蛋黄分开。
  3. 蛋白及塔塔粉一起打至气泡,幼糖分两次加入打至硬。
  4. 蛋黄与优格面糊一起搅拌均匀。特幼粉与粟米粉一起混合后筛入面糊内,拌匀。
  5. 将优格面糊倒入蛋白内,用塑胶刮刀以翻面的方式拌匀。
  6. 预热烤箱150度,隔水烘烤。先用下火烘烤20分钟,再用上下火继续烘烤20分钟至熟。

Ingredients:
4 eggs
1/2tsp cream of tartar
50g fine sugar
50g butter
200g mango yoghurt
50g fine flour
20g corn flour

Method:
1. In a hot pot with water, put in a bowl and melt the butter under low heat. Turn off the heat and mix the yoghurt well.
2. Separate the egg white and egg yolk
3. Put the cream of tartar and egg white together and beat. Add in the sugar gradually and beat till soft peak form.
4. Mix the egg yolk and the (1) above. Then add in the corn flour and the fine flour. Mix well.
5. Pour the mixture of (4) to (3). Mix gently. 
6. Preheat oven 150c, bake for 40 minutes in a water bath. (Place the baking pan in a big tray fill with water)
