以为椰浆饭只有在马来西亚才可以吃的到。也没想过在澳洲
材料 (饭):
3 杯米
1/2 杯椰浆
2杯水
2姜片 和1 粒红/紫葱 (切碎)
1根香茅,拍扁
盐适量
其他材料:
鸡腿(用蚝油,生抽,米酒和蜜糖腌制后,放入烤箱烤至熟
滚熟的鸡蛋
江鱼仔(炸至酥脆)
花生(我用现成的熟花生)
1 包sambal ikan bilis paste
做法:
1. 白米洗净,倒入椰浆,浸约10分钟。
2. 爆香红葱和姜。然后把1倒进来。翻炒一会儿。盛入饭锅内
3. 加水,盐和香茅,像平常煮饭一样煮至熟。
4. Sambal ikan bilis paste 倒入另一个锅内,煮滚,就可以淋在鸡腿,江鱼仔和花生上
5. 摆盘。

Ingredients (the rice) :
3 cups basmathi rice
1 1/2 cups coconut milk
2 cups water
1 small knob ginger & 1 red onion (grind into paste / chopped it)
1 stick lemongrass, smashed
salt to taste
Other ingredients (side dishes):
chicken drumstick / maryland (I use oyster sauce, soy sauce, cooking wine and honey to marinate and put in oven / air fryer to cook)
Boiled eggs
Ikan bilis (deep fry them till golden and crispy)
Peanut (I use the salt roasted peanut)
1 package of sambal ikan bilis paste
Method:
1. Wash and drain the rice, soak in coconut milk for 10 minutes.
2. Fry the red onion and ginger till fragrant. Then add 1 above the fry for a minute. Then move them to the rice cooker
3. Add water, salt and lemon grass to your rice and cook your rice as normal.
4. In another wok, heat the sambal ikan bilis paste until it boils. You can then add the paste onto the chicken drumstick, ikan bilis and peanuts.
